When it comes to sustainability, even our greatest efforts can sometimes feel like a drop in the bucket. Challenges the size of our planet call for teamwork, and we’re ecstatic to announce that Thomas Preti has officially teamed up with the Billion Oyster Project!
Starting this Spring, we’ve begun sharing our shells with the Billion Oyster Project to help restore NYC’s aquatic ecosystems, clean our waterways, and protect our city from storm damage.
Here’s how it works: we sort and save all the used shells from the oysters, clams, and scallops across our menus. Then, the Billion Oyster Project recycles these shells at sites throughout the New York Harbor to revitalize local oyster populations, jumpstarting the diverse habitats that oyster reefs promote.
To date, the Billion Oyster Project has restored over 75 million live oysters, each capable of filtering up to 50 gallons of water per day—that’s 3.75 billion gallons of clean water each and every day!
So, at your next event, after you’ve indulged in our delightful raw bar, don’t forget to do your part and drop your shells in one of our beautiful blue buckets!
